Dark Souls 1 PvP was pretty much backstab fishing only. Nobody really tried to hit the enemy with a regular attack. Therefore the fights were usually two people rolling around and into each other. It was a lot easier to pull it off, because of multiple reasons.
Step 1 Have 10 Int (You need 15 to equip the spells, but if you're not a sorcerer just use the Scholar Ring) Step 2 Equip Rapport and Hidden Body. Step 4 Equip Slumbering Dragoncrest Ring (Silent footsteps) Farming. Step 1 Cast HB after you cross the archway to aggro them. Step 2 Cast Rapport on one of the two Knights.
Broadly speaking, you may want to fight up close, from a distance or combine the two. If you're a brawler, choose a Knight. If you prefer to fight from a distance, choose a Sorcerer.
Exit the menu, and now you can cycle through your equipped weapons by pressing left on the d0pad for left hand, and right for right hand. Down is for swapping items (which you press square to use), and up is for swapping through spells, which you need to attune (attune means equip) at a bonfire.
